Springtime is fast approaching and the flowers and trees are blooming. Everywhere you look bradford pear trees look like they are covered in a blanket of snow. I have always enjoyed the beauty of spring and all the promises of life it holds. When I see the daffodils blooming I am always reminded of a poem that I had to learn in elementary school entitled “Daffodils” by Henry Wadsworth Longfellow. In this edition I thought the readers would like for us to go back in the archives and remember some of the former recipes of cooks in our county and one of my favorite poems. Hope you enjoy!
Daffodils
I wander’d lonely as a cloud , that floats on high o’er vales and hills,
when all at once I saw a crowd, a host, of golden daffodils;
Beside the lake, beneath the trees, fluttering and dancing in the breeze.
Continous as the stars that shine; and twinkle on the Milky Way,
They stretch’d in never-ending line, along the margin of a bay:
Ten thousand saw I at a glance, tossing their heads in sprightly dance.
The waves beside them danced; but they out-did the sparkling waves in glee:
A poet could not but be gay, in such a jocund company:
I gazed--and gazed-- but little though what wealth the show to me had brought:
For oft, when on my couch I lie, in vacant or in pensive mood,
They flash upon that inward eye, which is the bliss of solitude;
And then my heart with pleasure fills, and dances with the daffodils.

In mixing bowl add in this order:
2 eggs, 1 cup sugar, 1 1/2 cups shortening, 2 teaspoons vanilla
Add enough self-rising flour to make a firm dough. Roll out and bake in fairly hot oven so they will be soft about 400 degrees.
Broccoli Soup

2 cans cream of chicken soup
2 cans cream of mushroom soup
4 cans milk
2 pkgs. chopped broccoli
1 large onion
1 small jar Cheese Wiz
1 stick oleo
2 cups shredded sharp cheddar cheese
Pour soups and milk in a four quart Dutch oven or crock pot..... Mix well. Saute finely chopped onion and chopped broccoli in oleo until desired doneness is reached.
Add onion and broccoli to soup mixture. Add Cheese Wiz and cheddar cheese. Stir and heat slowly until mixture blends.
