Ashley Henley is a freshman international business major at East Central Community College. She is currently Newton County’s Miss Hospitality and owns Dezignz By Nikki a specialty gift shop and doggie boutique that also serves sandwiches, desserts, smoothies, and cappuccinos. Ashley recently received the Governor’s Initiative for Volunteer Excellence Award. She enjoys cheerleading, riding horses, swimming, and shopping.


Chicken Macaroni Bake
1 can cream of chicken soup
1 cup cooked chicken
1/2 cup milk
1 cup shredded chedder cheese
1 cup cooked macaroni

Heat the soup, chicken, milk and 3/4 cup cheese in a medium size pan on stove until the cheese melts, add macaroni and stir. Pour the mixture into buttered WHAT SIZE? dish and sprinkle remaining cheese on top. Bake at 350 for 30 minutes.

Sweet Potato Casserole
4 cups sweet potatoes cooked, peeled and mashed
3 cups sugar
4 eggs, beaten
1 cup heavy cream
3 sticks of butter, room temperature
1 tsp cinnamon
1 tsp nutmeg
1 cup rice krispies
1 cup pecans, chopped
1 cup walnuts, chopped
1 cup brown sugar

preheat oven to 350. grease 13X9 pan. Combine potatoes, sugar, eggs, 1/2 of the butter, heavy cream, cinnamon, and nutmeg then pour into pan. Combine rice krispies, pecans, walnuts, the rest of the butter and the brown sugar. Mix well and sprinkle over batter.
Bake for 40 minutes at 350.

Oatmeal Cookies
1 cup shortening
1 cup brown sugar
1 cup sugar
2 eggs
2 tsp vanilla
1 1/2 c self rising flour
3 cups oats

Cream together shortening, brown sugar and sugar, beat in the eggs and vanilla. Stir in the flour then the oats. Form into small balls and place on a greased cookie sheet. Bake at 350 for 10 minutes. Makes 6 dozen cookies.

Blueberry Dream Pie
8 oz cream cheese
12 oz cool whip
2 graham cracker pie crusts
1 box powdered sugar
1 can blueberry pie filling

Blend cream cheese, powdered sugar, and cool whip together. Divide mixture and pour into pie crusts. Divide blueberry mixture and spread on top of the cream cheese filling. Chill for 1 hour before serving.

Peanutty Pupsicles for Dogs
1 banana
1/2 cup peanut butter
1/4 cup wheat germ
1/4 cup chopped peanuts
Mash banana’s and peanut butter, stir in wheat germ. Chill 1 hour.With wet
hands, roll tsps. into balls. roll in nuts coating evenly. Place on a
cookie sheet. Freeze til solid. Place in container, store in fridge or
freezer.
